Barbadilloâs Manzanilla en Rama âPastora Pasadaâ comes from select soleras in SanlĂșcar de Barrameda, where flor aging creates saline intensity. Bottled en rama (unfiltered), this NV release shows extra depth from extended time under flor, bridging the freshness of young Manzanilla with the complexity of an older Pasada.
Typical notes of sea salt and bitter almonds along with a deeper, earthier minerality and a black and red spicier finish. Unstripped of its texture, it has a buoyant body, velvety texture and an extended finish.
A benchmark small-batch sherry in a 375ml format, perfect for savoring alongside olives, jamĂłn, or simply on its own.
