Tucked into Bordeaux's tiny CĂ©rons appellation, ChĂÂąteau de CĂ©rons has been run since 2012 by Xavier and Caroline Perromat, who farm limestone-rich slopes that lean toward an elegant, mineral style of Graves. This dry white is the everyday star ĂąâŹâ mostly SĂ©millon with Sauvignon Blanc, fermented in stainless to keep it bright and fresh. Expect lemon, white flowers and a gentle smoky-saline lift, with energetic texture and a long, clean finish. A serious, food-friendly white Bordeaux that flies under the radar. Hard to beat for the table.
