Vin Jaune is the Jura's legend, and Domaine de Montbourgeau makes a benchmark one. Grown from Savagnin in the fossil-strewn soils of L'Etoile, the wine spends over six years aging in barrel under a veil of yeast, untopped, slowly turning gold and developing its famous nutty, savory intensity. The result is unlike almost anything else in wine: dry, powerful, and endlessly complex, with curry spice, walnut, and a saline tang that lingers for ages. It's bottled in the traditional squat clavelin and built to age for decades. A true original for the adventurous.
