Lo Sang del Pais means "the blood of the country" in Occitan, and few wines wear their home so proudly. This is the everyday Marcillac — 100% Fer Servadou (they call it Mansois here) grown on the iron-red soils of the Aveyron in deep southwest France. Domaine du Cros, run by the Teulier family, is the appellation's biggest independent producer and a big reason Marcillac got its groove back. Bright, peppery and mineral, it's built to be drunk young and joyfully, ideally with a slight chill and a plate of something rustic.
