The Eyrie Vineyards is hallowed ground in Oregon: David Lett planted the Dundee Hills' first Pinot Noir and Chardonnay here in 1965, betting the Willamette Valley could rival Burgundy. Today his son Jason carries the torch Ć¢ā¬ā and his curiosity Ć¢ā¬ā and in 2012 he planted the valley's very first Trousseau, the pale, perfumed red grape of France's Jura. Grown on no-till organic vines and fermented with wild yeast, it's a delicate, savory charmer: light in color, packed with red fruit, dried herbs and an earthy, mineral lift.
