The Story

Brut Nature means nobody added sugar at the end. No dosage, no makeup, nothing to hide behind. That is a nervy way to make sparkling wine, and it only works if the farming and the fruit can carry it. Jonas Dostert's Rochus is a traditional-method Cremant from the Obermosel, the limestone half of the Mosel that gets none of the attention and grows some of Germany's most electric acidity. Bottle-fermented and disgorged bone dry, it is all tension and chalk: green apple, citrus, a bread-crust note from the lees, and a finish that reads more saline than fruity. The code on the label — #21/1 — is the 2021 base vintage followed by the disgorgement number; the disgorgement date is printed on the label too. Sparkling wine for people who find most sparkling wine too sweet.
