It is a blanc de noirs, meaning white wine pressed from black grapes, and it lands right where Bouzy is at its best: real power and red-fruited depth, with the chalky subsoil pulling everything back into line. Extra Brut, so the dosage stays out of the way. Expect blackcurrant and orange oil, a briny, saline snap and a fine, persistent mousse.
