Billes Noires is his serious, age-worthy cuvee, drawn from three old-vine parcels planted as far back as 1920 on deep decomposed granite, with tiny yields that pack in concentration even at a modest alcohol level. Given three years of maturation before release, this is inky, savory, structured Syrah, all bloody meat, wildflowers and cracked pepper over dark fruit that plays a supporting role to the wine's backbone.
