Sébastien Cathiard's quiet domaine in Vosne-Romanée produces some of Burgundy's most sought-after Pinot Noir from just over four hectares. This Nuits-Saint-Georges Premier Cru comes from Aux Thorey—often called the Volnay of the Côte de Nuits for its emphasis on perfume and elegance over raw power.
