The Story
Alta Alella's Mirgin is an organic, estate-grown Cava made from a single terroir: Xarel·lo (Pansa Blanca), Macabeu, and Parellada from the Comtats de Barcelona, a cooler maritime zone near the Mediterranean. Mirgin ages a minimum of 35 months on its lees, building toasty complexity without the heaviness of added sugarâit's Brut Nature (no dosage), bone-dry and tense. The result is pale yellow with green hues, delicate and poised, with white fruit and citrus on entry followed by notes of pastry and green almond from extended aging. This is serious Cava, proof that the category deserves attention beyond occasion.
