The Story

Remo Falconieri, a typewriter designer turned sparkling wine dreamer, founded Cieck in 1985 after traveling to France to study production methods. His first vintage yielded just 2,500 bottles. Slow Food founder Carlin Petrini later called him "the Archimedes of bubbly." Cieck was instrumental in elevating Erbaluce to DOCG status in 2010, demonstrating through quality what the indigenous Piedmontese variety could achieve. The San Giorgio Spumante sees traditional bottle fermentation with a minimum 36 months on lees—more than twice the DOCG requirement—developing bread-like complexity while maintaining fresh acidity. The glacial moraine soils of the Canavese region impart distinctive mineral character unavailable elsewhere.
