White Maranges represents just 5% of this southern Côte d'Or appellation's production—making this organic Chardonnay a genuine Burgundy rarity. Hugo Mathurin and Talloulah Dubourg founded Domaine de Cassiopée in 2020, acquiring five hectares in Sampigny-lès-Maranges and immediately converting to organic viticulture, achieving certification by 2023. Their biodynamic orientation and lunar-calendar farming produce a wine of striking purity from limestone-rich slopes in the elevated southern Côte d'Or. Minimal sulfur and low-intervention cellar work yield a Chardonnay with racy acidity and saline minerality that defies Maranges' reputation as merely Burgundy's affordable back door. The 2023—Burgundy's hottest harvest on record—delivered generous fruit balanced by the altitude's natural freshness. This is serious, terroir-driven Burgundy at a fraction of Côte de Beaune prices.
