The Story
Giovanni Canonica is one of Barolo’s most elusive traditionalists, farming just 1.5 hectares in the Paiagallo cru above the village. The 2021 is 100% Nebbiolo, organically grown on marl-rich slopes. Fermentation is spontaneous with native yeasts and extended maceration of 30–40 days.
Aged for three years in cement and large Slavonian oak, it’s bottled unfined and unfiltered. This is Canonica’s flagship—deep, structured, and uncompromisingly expressive of site and vintage.
